Greek salad


Okay, this one’s mostly for me. No one else likes feta cheese, really, even Papa Swabey. And Little Lady Swabey’s not really into the olives or onions either. But it’s delicious, dammit. And it takes me back to family holidays in Greece when I was a teenager, so I still put it on the table from time to time. And because it’s quite a chunky salad, the kids can pick out the bits they like and I can pick at whatever they leave.

This recipe uses the amounts that the packaged ingredients come in and makes plenty for a couple of lunches as part of a meal (i.e. on the side of a sandwich or spud or something).  Or goes even further if you’re the only one eating it…

  • 4-6 large tomatoes
  • 1/2 a cucumber
  • 1 red onion
  • 140g pack mixed pitted olives
  • 200g feta cheese
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  1. Chop the tomatoes, cucumber, red onion and feta cheese into chunks. Mix all ingredients together in a bowl and enjoy!
